In honor of National Pumpkin Day the other day, I shared one of my favorite recipes! I mean, of course I celebrated being the pumpkin fanatic that I am! Take advantage of these as they are one of the tastiest ways to celebrate pumpkin…in my opinion that is. Oh, and bonus–these are full of healthy ingredients
Blend until smooth:
3/4 cup pure pumpkin
3/4 cup peanut butter (any kind– this time was cinnamon vanilla pecan peanut butter)
1/4 cup maple syrup
1/2 cup coconut flour
Mix in 1/4 cup chopped pecans.
Roll into balls & allow to chill in fridge.
Melt 3/4 cup dark chocolate chips + 3 TB coconut oil
Dip chilled pumpkin bites into mix.
Sprinkle with ghee toasted pecans🤤
Store in fridge/freezer.
